It is only March, and Texas has already tasted a sliver of the heat that will ensue over the next few months. I personally don't mind the warmth that penetrates clothing and knows no mercy during July and August, but I must be fully prepared with bottomless bottles of water and enough fresh-squeezed juice to hydrate me to the max.
Although I consume green smoothies daily throughout the year, this kale and pineapple smoothie is extra exhilarating in the summer and sweet like honey dripping from the comb. One of the many reasons this beverage is a constant in my kitchen is because it is so easy to make and provides a day's worth of vitamins, minerals, and antioxidants. I simply decide what ingredients I want/need and throw them into the blender. My smoothies always include kale, hemp seed, and coconut butter or coconut oil for their healing properties. Coconut oil/butter is known to lower cholesterol and blood pressure, boost metabolism, fight infection, assist with digestion, and increase bone health. I slather it on my skin each night before bed as a moisturizer. Some people are now using it to reverse effects of Alzheimer's disease. I am a believer in this stuff and sometimes eat a spoonful of coconut butter as a healthy and yummy snack. I have only seen positive results since I started using it a few years ago and crave it each and every day. Combining it with hemp seed and kale has been a life-changing choice for me. This smoothie is just one of the many that are in rotation at my house. If you don't have pineapple on hand, you can always throw in fruits that are accessible. Be creative and feel free to play!
