I am sharing with you my favorite (and best ever) salad of all time! This hodgepodge of greens and things has been on regular rotation in my kitchen for years, appearing at just about every dinner party I've attended and stealing hearts at every table it graces. I have tried branching out with other salads, even convincing myself I will find a replacement, but this Maple Spiced Pecan and Blue Cheese Salad holds my unparalleled devotion. The sweet, nutty, and tangy flavors mingle with butter leaf lettuce for a palatable and lively experience in your mouth and belly.
Surprisingly enough, this dish does not include hemp seed, coconut oil, kale, or chocolate. However, it does contain the most beautiful dried cranberries I have ever eaten, which are very moist and naturally sweetened with apple juice. I found them at Whole Foods and have been eating them daily as a snack. I store them in the fridge for a chewy texture that reminds me a little of Swedish Fish, one of my favorite candies I no longer eat. The gummy garnet dried fruit is a perfect addition to this salad. I also throw in some of the Maple Spiced Pecans I love so much for an earthy essence. Raw blue cheese provides a creamy, tangy touch that makes this dish irresistible. The salad needs little to no dressing, so I pour just a bit on this pile of perfection and indulge. Head-over-heels in love.
Maple Spiced Pecans, Cranberry, and Blue Cheese Salad
Tangy & Sweet Dressing
6 tbs. cold-pressed olive oil
3 tbs. raw apple cider vinegar
1 tbs. pure maple syrup
2 tsp. cholula hot sauce
pinch of black pepper
1. With a fork, mix all ingredients together in a bowl until well combined and place in fridge.
2 heads butter leaf lettuce
1/3 cup maple spiced pecans (you can break them in half if you prefer smaller pieces)
1/4 cup dried cranberries, naturally sweetened
1/3 cup raw blue cheese (unpasteurized), crumbled
1. Rinse and dry lettuce leaves. Chop into bite-size pieces.
2. Place leaves into a large bowl.
3. Pour the dressing over lettuce and stir until leaves are slightly coated.
4. Add pecans, cranberries, and blue cheese to salad. Toss ingredients together. Done!
