When I was in my early twenties, I visited a Mexican restaurant in Dallas every Friday night with my boyfriend at the time just to indulge in what I thought was the best guacamole ever. Piling it on top of cheesy fajita nachos and watching every last bite slowly disappear was one of the highlights of my week. To this day, I don't think I have ever left even the tiniest remnants of avocado in a bowl when it is sitting in front of me. I love guacamole and anyone who knows me well can attest to that statement, since most of the people in my life have at one time or another given me a healthy portion of theirs when mine runs out.
For years, I have been trying to master the perfect ratio of avocado to garlic and lime for a homemade appetizer that thrills each guest who walks into my kitchen. I feel like I've finally accomplished this mission. I begin with a perfectly ripe avocado and mash it up just enough to get a smooth texture but making sure to leave plenty of small chunks. Then, I add a little fresh squeezed lime juice to keep it from browning. Next, I throw in tiny pieces of jalapeno and onion with minced garlic clove. Oh, the benefits in that combination! It will boost your metabolism and the immune system. Cilantro is essential and I put tons of it into my guacamole. It not only cools the system after all that spice you've consumed, but it also cleanses your body of heavy metals that have accumulated over time. If you have never heard about the health benefits of avocado, let me just start by saying it does wonders for the skin, thanks to the nourishing fats and vitamins it contains. It also helps balance blood sugar (especially when eaten with fruit/sugars) and enhances your body's absorption of nutrients. It is such a healthy snack and there are well over 100 ways to eat this fruit. I prefer mixing it with chocolate and maple syrup most of the time. It will take on the flavor of just about any food you add it to. If you really want to impress someone with your inventive avocado-mixing skills, make this pie. You will score serious bonus points and delight your tastebuds all at the same time!
3 large ripe avocados, peeled and pitted
1 lime, juiced
1/2 jalapeno, seeded and diced
1/2 large red onion, diced
1 clove garlic, minced
3 tbs. cilantro leaves
1 tsp. salt
1. Scoop avocado into a bowl.
2. Mash with a fork until you have a smooth, chunky texture.
3. Add lime juice, jalapeno, onion, garlic, cilantro leaves, salt and mix gently.
4. Eat until your heart is content. (I like veggie chips with mine.)
