My nine-year old nephew is coming into town tomorrow to visit for a few days and I have promised him plenty of homemade sweet treats (healthy, of course) and all the kisses he can handle (hoping he has not outgrown my enthusiastic nature he found so endearing in his earlier days, before he had friends and a reputation to uphold). I LOVE being an aunt. It gives me unparalleled joy and fills my heart with a love so pure and uplifting, awakening innocence and a playfulness that children so naturally bring to light in adults.
Last week, my sister called to tell me that her husband (my nephew's dad) had mentioned a restaurant that "makes the best grilled cheese," and my nephew said, "No, Amy does." Moments like these warm my heart like nothing else. Because I am keeping things gluten/grain AND dairy free, I knew I would have to come up with a few dishes that could keep up with the popular and much loved sandwich that is an American crowd favorite.
With my sweet little guest in mind, I put together some chocolate tarts today that are clean and completely raw (right down to the core) with all the flavor you will ever want in a dessert. I have used only dates as a sweetener with raw hazelnuts and the beloved avocado I so often praise. It came out so perfectly sweet and chocolatey and smooth and satisfying! The way any nine-year old would expect it to be.
Raw Chocolate Tarts with Hazelnut Crust
1. Add avocado, nut milk, coconut oil and 5 dates to food processor or high-speed blender, such as Vita-Mix.
2. Once mixture is smooth, add the 5 additional dates and combine until smooth.
